Crushed tomato

Fresh tomatoes, just harvested at their optimum maturity, are crushed and sifted, by reducing their water content by vacuum evaporation, a tomato puree is obtained free of skins and seeds, with a good consistency and preserving all the flavor and aroma of fresh tomato.
